Banana Muffins

Whether you want a warm breakfast on a Sunday morning or a little afternoon snack, these banana muffins are the perfect treat. Many people forget to use bananas during the week, so they start to turn brown. Luckily, this is a great opportunity for delicious muffins. I made this recipe by combining my grandma’s banana bread recipe and adding my own spin to it. The spices are what really make good banana muffins. This recipe also works great as a loaf of banana bread too.
Feel free to add more cinnamon and nutmeg for additional flavor.
Ingredients
- 4 large ripe bananas
- 1 cup white sugar
- 2 large eggs
- 1/2 cup butter (melted or softened)
- 2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1/2 half teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon brown sugar
- 1 1/2 cups chopped walnuts (optional)
Instructions
- Preheat oven to 350°F and fill your muffin tray with liners.
- Place the bananas in a large bowl and mash well.
- Whisk in the white sugar and eggs.
- Mix in the butter and add vanilla.
- Put the flour and baking soda into the bowl along with the brown sugar, salt, cinnamon, nutmeg, and walnuts if desired.
- Mix until all ingredients are evenly distributed.
- Scoop the batter into the lined muffin tray.
- Bake at 350°F for about 25 minutes or until golden brown. Check if they are done by poking the center with a toothpick to see if it comes out clean.
- Let the muffins cool on a wire rack and enjoy!
